This past week I had so many after-work commitments, I knew it would be nearly impossible to make dinner most nights. It was one of those crazy "I'm juggling 50 things at once" weeks, and I knew that the only way to make it work was to rely on my trusty crock pot.
In the past I would have driven through somewhere, or ordered food to go from a restaurant. I am so proud of our family for quitting the excuses and relying WAY less on take-out meals. It takes a bit more planning, but if you own a crock pot, it's really very easy to have a healthy, home-cooked meal ready for your family when you get home!
So this week we made minestrone soup. I love minestrone, and it is full of veggies, which works really well for the 21 Day Fix meal plan that I am currently following. Plus, you can switch up what you serve with the soup to make different meals. The soup is great on it's own, or even better when paired with a nice salad, but our favorite is serving it with turkey and cheese panini's made in our panini press! However you decide to serve it, everyone is sure to love it.
Ingredients:
1 15 oz can kidney beans, rinsed and drained
1 cup shredded cabbage
1/2 cup sliced carrot
1/2 cup sliced celery
1/2 cup chopped onion
1 14 oz can diced tomatoes with basil, oregano and garlic
1 14 oz can beef broth (can use veggie broth if you want this to be a truly vegetarian dish)
3 cups water
1/4 tsp salt
1/4 tsp black pepper
8 oz fresh green beans, cut into 2 inch pieces
1/2 cup tiny whole wheat macaroni noodles
2 tbsp snipped fresh parsley
1/2 cup finely shredded Parmesan cheese (optional)
To make the soup:
In your slow cooker, place beans, cabbage, carrot, celery and onion. Stir in undrained tomatoes, broth, water, salt and pepper. Cover, cook on low setting for 8-10 hours or high setting for 4-5 hours.
If using low setting, turn to high. Stir green beans and macaroni noodles into soup mixture. Cover; cook for another 30 minutes. Stir in parsley. Ladle into soup bowls. Sprinkle each serving with Parmesan cheese, if desired. Enjoy!

Crockpot BBQ Apple Pork Tenderloin
I am obsessed with finding new healthy crockpot meals! My goal is to make dinner in the crockpot at least once a week, ideally twice. I mean, how awesome is it to come home from work and have dinner ready? It is so much better than stopping to pick something up, or having to slave in the kitchen for an hour when I am already hungry and exhausted.
I adapted this recipe from one I saw on Pintrest, and it was so simple and delicious that I couldn't help but share! There are literally 4 ingredients. That's it! You can't get much easier than that, right? Plus, it's pretty versatile, so you could easily change it up a little bit to make different variations.
Here are the ingredients:
1 pound pork tenderloin (you could use turkey or beef tenderloin if you don't eat pork)
1 cup unsweetened applesauce (chunky is best, but not necessary)
1 cup BBQ sauce
1/4 cup minced onion
It was really eye opening to find a BBQ sauce that was anything I could consider adding to a clean recipe. Almost every single bottle in the store had high fructose corn syrup, and usually as the first ingredient! Some of them had more than 20 ingredients that I did not recognize, and many topped off at more than 20 grams of sugar per serving! I did end up finding a good choice though, with all natural ingredients that I recognized and only 6 grams of sugar per serving. Just check your labels carefully and choose wisely. Or, you could choose to make your own BBQ sauce. Simply google "homemade BBQ sauce" and a ton of recipes come up. For my purposes, I was trying to make a super fast meal that could be thrown into the crock pot in 5 minutes on a weekday morning, so I wanted to use bottled.
To make this, you literally just have to place the pork tenderloin, silver skin removed, on the bottom of the slow cooker.
Mix the applesauce and BBQ sauce together and pour evenly over the pork. Top with minced onion. Cook on high for 6 hours. When done, the meat should easily shred with two forks. Stir the shredded pork with the sauce and let it sit in the crock pot for about 5 more minutes, to make sure that all of the meat has been soaked with the sauce.
I served the meat on top of a piece of whole wheat toast with a spinach and raspberry side salad, but it would be great as a shredded pork sandwich on a bun, or on top of rice, or even wrapped up in lettuce! There are tons of options.

Trader Joe's how do I love thee? Let me count the ways...
So if you know me well, you know that I am OBSESSED with Trader Joe's! I literally go twice a week. I'm lucky enough to live about a mile from one, so it's not out of my way at all to stop in a pick up a few things on the way home from work. I have had a love affair with TJ's for a few years now, and I often get asked what I buy there. I honestly buy most of my groceries at Trader Joes, minus a few staples that I get at Super Target (another love affair... I'll save it for a different blog post!).
So here are some items that are part of my weekly routine shopping lists:

1. Reduced Guilt Chunky Guacamole made with Greek Yogurt. OMG.. just try it! It's got all the flavor of guacamole, plus a little extra tanginess from the greek yogurt, and it's only got half the fat and calories of regular guac?! Yes, please! Dip some bell peppers in there and BAM! You've got yourself a healthy snack from the heavens!
2. Spicy Ranchero Egg White Salad. Okay, it's tough to even describe the yumminess of this one. It's egg salad, made with only egg whites, and with a spicy kick to it that makes it so unique and delicious. Best of all, it's only got 100 calories in the whole thing, almost no fat at all, and no sugar! By itself it makes a great high-protein snack, or top it on a whole wheat english muffin with some cheese and tomatoes for a perfect sandwich.

3. Blueberry Fiber Mini Cakes. Put it this way.12 grams of fiber, 80 calories, only a few natural ingredients, and tastes like cake. Convinced? I have one pretty much every morning. The only bad thing is that they get moldy quickly (because there are no preservatives, as it should be!). In my house, it's not a problem because they go quickly. But make sure you pick a pack from the back so it will last longer. There is also a really yummy cranberry apple flavor, which I actually like better, but my husband doesn't like cranberries.

4. Quinoa and Steel Cut Oatmeal. This stuff is the BOMB! It comes with two frozen "pucks" of oatmeal mixed with Quinoa. For those of you who aren't familiar with quinoa, it is a grain that also acts as a complete protein, meaning you are adding protein to your oatmeal without even tasting it! It also has real maple syrup and brown sugar in it, but only enough to make it slightly sweet. I love that it has all natural ingredients, and it is ready in 2 minutes in my microwave. Even the busiest mornings can have a healthy, filling breakfast. My favorite is to add raisins and cinnamon.
5. Prepared Salads. There are so many amazing prepared salads at TJ's, and no matter what your personal tastes are, you'll find one. The key is to read the ingredients and check out the calorie and fat content both with and without the dressing. Some of the salads are not at all low calorie, or low fat, so don't assume that you are eating healthy because you are eating a salad! But I have a few standards that I love and I always like to have one available in the fridge at home for an easy to pack lunch on the go or dinner. Three of my favorites are the Harvest Chicken Salad, the Mexicali Salad and the Roasted Butternut Squash, Red Quinoa and Wheatberry Salad. They are all reasonable calories/fat for a healthy meal and delicious!

6. Nuts: OMG, there are so many kids of nuts and trail mixes at TJ's its crazy! You do have to be careful, because there are plenty of trail mixes that aren't exactly "clean eating," with lots of chocolate in them, etc. But there are so many great options. I do love that I can get preportioned sizes of raw almonds, so that I can literally grab a pack and throw it in my purse when I'm short on time (which is like, always).
7. Cold Brewed Coffee Concentrate: Say what? Yeah, it's literally cold coffee concentrate that you mix with milk (or water) to make an instant iced coffee. Or, if you are me, you put it into your Vanilla or Chocolate Shakeology for an instant blended latte or mocha. Can I get a hell yeah? Hell yeah! I love this stuff. No more brewing coffee the night before and then letting it cool. I told you, I'm all about quick tricks that make life easier while still keeping it healthy.
8. Ready to eat shelled edamame: you can find frozen edamame other places, but I've never seen it ready to eat like this. Edamame, or soybeans, are a wonderful snack because they combine tons of protein, fiber and complex carbohydrates. You can sprinkle them in a salad, or just snack on them straight out of the container. I like them with a little bit of chili seasoning and lime juice, but you can certainly eat them plain.

9. Extra Lean ground beef: Only at TJ's have I found 4% fat ground beef, both in a 1 pound package and in patties. I mean at 4% fat, it's as good as eating lean turkey or chicken, but you still get the taste of beef. No need to eliminate hamburgers or beef tacos from your menu when you can get it for 96% fat free!

10. Healthy 8 chopped veggie mix: This is literally chopped up broccoli, carrots, green cabbage, red cabbage, jicama, green bell pepper, raddish and celery. That's it. It's a perfect base for a salad, you can put it into recipes, saute it, make it into a healthy coleslaw-- it's amazing! I like to just throw some lowfat dressing, tomatoes and even some fresh lentils on it and it becomes a super healthy lunch. So easy, so healthy.
Those are just some of my favorite Trader Joe's gems, but there are more that I love..and they keep on introducing new things all the time! So if you have a TJ's in your neighborhood, give some of them a try!

Eating Clean Rules to Live By
“Eating Clean” means eating foods that are as close to their
natural state as possible, while avoiding processed or genetically modified
foods. For example, Pepsi, Doritos, and Oreos do not occur in nature - they are
processed and made in a plant. Broccoli, apples, chicken and brown rice - these
things grow in nature. By eating clean, you are ridding your body of chemicals
and preservatives that were never meant to be there in the first place. Toxins
hide in our body fat and make it harder for us to lose the weight. Eating clean
rids our body of these toxins, literally detoxing our body naturally, fueling
our body with the nutrients we need, which in turn revs our metabolism, and allows
our bodies to let go of the weight. In
short - if you're buying something that is in a box, or a bag, flip it over and
read the ingredients. My rule of thumb is - if you can't pronounce the
ingredients and have no idea what it is - put it back where you found it, and
step away. Also, try to find packaged
foods that have 5 or fewer ingredients. Usually, the longer the list of
ingredients, the more likely there are lots of preservatives and artificial
crap that is best to avoid. Fresh food
is best, frozen next, canned is last.
So let's get down to business. I'll touch on each principal more
in the future during our challenge, but these are the basics.
Here's what to do:
1. EAT MORE OFTEN! (yes it's true) Eat 5 - 6 times a day, spaced
about 2.5 - 3 hours apart. I know, this may freak you out at first. I was also
scared to do this, thinking that eating more often would make it harder to lose
weight. But the opposite happened! I ended up never feeling hungry, because I
never let myself go too long without eating. My metabolism definitely sped up,
and I also found myself with fewer drops in energy due to low blood sugar. A good rule of thumb is to eat breakfast, a
snack, lunch, a snack, dinner, and then another snack if needed before bed.
2. Eat Breakfast EVERY DAY - within one hour of rising, if
possible. Shakeology counts as
breakfast, if you choose to have it in the morning.
3. Eat a combination of lean protein and complex carbohydrates
at each meal. Complex carbohydrates include fruits, veggies, and whole grains.
So an example of this would be eggs with peppers and mushrooms, or salad topped
with grilled chicken, or a snack of almonds and an apple.
4. Eat sufficient (two to three servings) healthy fats every
day. Examples of healthy (unsaturated) fats include olive oil, nuts, avocado,
coconut.
5. Drink enough water each day. Ideally, you should consume half
of your body weight in ounces each day. At a minimum, drink 2 liters. It is
especially important to rehydrate after exercise.
6. Carry a cooler packed with clean foods. Doing so ensures you
aren't stuck somewhere - at work, in traffic, etc - without a healthy option
and have to sit there starving and miserable, or worse - getting something out
of the vending machine. At the very
least, keep a snack in your purse/glove compartment, such as nuts and dried
fruit or a Lara Bar (my favorite kind of bar—only 5 all natural ingredients and
nothing else!)
7. Depend on fresh fruits and vegetables for fiber, vitamins,
nutrients, and enzymes.
8. Adhere to proper portion sizes.
Here's what to AVOID:
1. Avoid all over-processed foods, particularly white flour and
sugar. Do you know why it's white? Because they've stripped it of all its
vitamins and nutrients! There's literally NO good reason to have it. Also,
anything that says “enriched wheat flour” means it is not really wheat! They
had to “enrich” it because it was first stripped of anything good, then they
had to artificially put it back in.
2. Avoid chemically charged foods. If you can't pronounce
it/never heard of it - put it down!
3. Avoid foods containing preservatives. Who needs something
with a shelf life of a year?! That does not seem like "real" food to
me.
4. Avoid artificial sugars. Put down the Sweet & Low, Equal,
Splenda and everything else that is cooked up by chemists. Choose Stevia, 100%
real maple syrup, honey, or Agave Nectar to sweeten your coffee or tea. These
things occur in nature and that's what you want!
5. Avoid artificial foods like processed cheese slices.
6. Avoid saturated and trans fats.
7. Avoid sugar loaded drinks like sodas and juices and fancy
coffee drinks.
8. Avoid - or do your best to limit - alcoholic beverages.
Drinking wine before bed every night does nothing but halt your body from
burning fat. Alcohol contains a ton of sugar, so it acts like a piece of cake
in your body. Save it for once in a while - you will see a difference if you
cut out regular alcohol intake.
9.Avoid all calorie dense food containing little to no
nutritional value. These are anti-foods!
Think of food as fuel, and remember that whatever you are eating should
be giving your body something that it needs.
10. Avoid "super -sizing" anything. Eat smaller meals
more often throughout the day and avoid eating all of your calories at once -
your body can't burn a ton of calories all at once, especially if you've hardly
eaten all day - making your metabolism sluggish, and you'll store most of that
huge meal as fat!
I know that at first, this list can seem very overwhelming,
especially if you are new to eating this way. I want you to know that you do
not have to immediately change everything in your diet to follow this 100%
(although you certainly can, if you feel up to it!). If that is too daunting of
a task, no problem. Take it one baby step at a time. Pick one thing that you
think you can change right now. Maybe it’s cutting out soda, or switching to
Stevia in your coffee. Perhaps you can
try to eat 5 times per day instead of 2. Whatever you choose, make a commitment
to stick to that new change for a week, and then add on another change the
following week. Before long, you will be eating clean!
